objective of the present work was to specifically evaluate the
effects of AITC treatment on decay, color,
firmness, total soluble
solids, titratable acid, ascorbic acid, total phenolics, total anthocyanin,
malondialdehyde (MDA) and lipoxygenase (LOX), superoxide
dismutase (SOD), guaiacol peroxidase (POD), catalase (CAT) and
ascorbate peroxidase (As-POD) activity of mulberry fruit in plastic
sealed box during storage
