Rice was procured from local market of Mumbai and ground to a flour to pass through 20-mesh sieve. Red beetroot colour (containing 74.8% sugar, 10% protein,1.2% fat, 12% fibre and 0.75% betalains ) and packaging materials were procured from Valentine Agro Ltd., Mumbai and Shako Flexipack Pvt. Ltd., Mumbai, respectively. All the other chemicals used for analysis were of AR garde and procured from reliable sources.
