The applicability of SACs in several fields depends on their stability at different temperatures, salinities and pH values. In order to assess the effect of salinity on the emulsifier activity, bioemulsifier solutions (1 g/l) were supplemented with different NaCl concentrations, ranging from 10 to 300 g/l, and then emulsifying activity was measured. The addition of NaCl, even in amounts above the limit of saturation (300 g/l), did not have a negative effect on the emulsifying activity, which remained almost constant, between 57.5 and 59.0% (data not shown). Bioemulsifiers that are not affected by NaCl concentrations up to 200–300 g/l have been
