After drying the samples were weighed and subjected to quality
analysis. The quality of the dried samples was assessed by
measuring their total color change, retention of vitamin C, water
activity, and mass of water gained during the rehydration process.
The total color change (DE) of fresh/dried material was measured
25 times in 5 different points on the sample surface using a
colorimeter (CR-400 Konica Minolta, illuminant D65, observer 2,
precision 0.01, Japan), and indicated by CIE L*a*b* color space. The
value of color change was calculated using the following formula:
