As compared to
untreated rice starch, AR and HR exhibited a significantly
low PV which was clearly attributed to the restricted
swelling capacity. During continued heating and shearing,
the HPV of AR apparently reduced and subsequently a
high BD compared to UR. In contrast, HR exhibited that
paste viscosity remained nearly constant, indicative of
good hot paste stability. FV of AR was comparable to UR
and these were higher than HR (Po0:05).
