Roughly mash potatoes and vegetables and mix with sauce, adding salt and pepper to taste.
STEP 2 Divide into 16 equal portions and form each into sausage shaped croquettes.
STEP 3 Roll each croquette in flour, egg and then breadcrumbs to coat.
STEP 4 Heat oil in a large frying pan and gently shallow fry in batches until the croquettes are golden all over.
STEP 5 Drain on kitchen paper before serving with a salad.
