Khaotan (rice cracker) is a northern traditional snack. The name 'Khao Tan' can be traced back to the old days when the villagers in north of Thailand practised paddy field farming but earned low wages. As a result, they subsisted on a diet of sticky rice and usually had some of the leftover sticky rice dried in the sun. They then fried the dried sticky rice in the pan for storage and further consumption purposes. Afterwards, they poured sugar and sugarcane juice onto the fried sticky rice which was flavoured with watermelon juice.
