Oil holding capacity Oil holding capacity (OHC) of lemon grass fiber was 2.25 g/g fiber which was found to be lower than the values of some agricultural by-products, e.g. sugar beet fiber, sugarcane bagasse and coconut fiber (5.10, 5.06 and 4.80 g/g fiber, respectively) (1, 28, 73). Similar to WHC, OHC of fiber could be influenced by its particle size. According to Sangnark and Noomhorm, the reduction of particle size of fiber ranged from 1127 to 390 µm resulted in increased OHC. Additionally, the polarity of the fiber might be another factor affecting this property. Since most parts of dietary fiber are hydrophilic, it cannot retain large amount of oil. This property is beneficial for flavor and fat retention in cooked meat products.
