Glycinin and b-conglycinin account for approximately 60–75% of the total soybean seed proteins. They are structurally different and possess rather different properties including molecular makeup, isoelectric points and amino acid composition, all of which could affect their functionality, including heating, stability and gel strength in a food system such as the gel network in tofu.
