Effective diffusivity (Deff) values for pea were determined by using Eq. (2) and moisture content data. Effective diffusivities were found as 0.64 × 10−10 and 3.27 × 10−10 m2/s for open sun and solar-assisted spouted dried pea, respectively. These values were in the range of effective diffusivity values for drying of food products given in literature (Madamba et al., 1996).
