Until now, whey protein from milk is the most popular material
for probiotics encapsulation. Few references using pure milk-based
carrier for probiotics encapsulation have been reported. In this
paper, pure milk was used as an inner layer for encapsulating model
probiotic Lactobacillus bulgaricus. Carrageenan-locust bean gum
was used as an outer layer for coating the milk microspheres. Thus,
carrageenan-locust bean gum coated milk microspheres with
double layer structure were produced. In vitro evaluation of free
and encapsulated L. bulgaricus activity was investigated. All results
obtained here can build a base for its application in food relevant
industries
