A Culinary History of Indonesia
Due in part to their location, the fertile green islands that comprise modern Indonesia have frequently been invaded. They have also traded with nations such as Malaysia, China, India, Persia, Arabia and Spain, as well as some European sea-going nations during the Spice Wars in the 16th and 17th centuries. This regular and long-term contact with foreign countries has had a significant impact on all aspects of Indonesian life, from religious beliefs and agricultural methods to culinary ingredients and cooking techniques-which are all still very much in evidence today.
