It’s here where I’d like to mention Thai food. Again, I am no foodie. That being said, Authentic Thai Food is some of the most delicious food I have ever ate in my life. It deserves its own paragraph. It deserves its own publicist. Every single meal I have eaten in this beautiful country has been “Ahroy” (thats misspelled Thai for delicious…so I’ve been told). Noodles and won tons sold by street vendors for 35 Baht ($1.12) belong in a museum (wow am I bad at food analogies). Thai food cooked by our Thai Mom is flat out amazing. I’m talking about sticky rice and fruits and veggies and spices I’ve never heard of coming together to make me salivate just typing about them. Thai spice is world famous and It’s something I’m adapting to one deliriously delectable plate at a time. Don’t get me started on the deserts! Ten Baht (c’mon now) for a desert I rank right up there with the almighty American Apple Pie. Its a simple “Pancake” or what we like to refer to as a “CrackCake”. It’s basically a very thin pancake heated over oil and butter and spread over with a tablespoon of sugar and creamy condensed milk. Diabetics beware. Fat boys, rejoice. With Lee back from his visa run in order to get more time in Thailand, we found ourselves on an overcrowded bus headed North again, this time with a nice South African girl named Nicole in tow. She was baited with promises of “The Jungle” and was hooked as I had been. As I type this I’m outside of our Jungle guesthouse, listening to the calm sounds of the passing Jungle river heavy from the hours long downpour today, and watching (seriously, this is true) a dozen Jungle oxen walking down the road. I will be here another few days doing Jungle activites, enjoing nature and the locals and the food. Tomorrow I’ll go white water rafting, knock down a coconut, chop it open, and sip, with a smile on my face that says “Thailand, I had no idea.”
