Electrophoretic Mobility
Electrophoretic mobility measurements (μE) were per- formed by means of laser Doppler electrophoresis. Each sample was put in a standard capillary electrophoresis cell equipped with gold electrodes. The emulsions were diluted (1:400) to measure their electrophoretic mobility using a Malvern Zetasizer Nano ZS (Malvern instru- ments, UK) to evaluate the surface net charge around the lipid droplets. Prior to analysis, emulsions were diluted with de-ionized water, to avoid multiple scattering effects, and were then directly placed into the equipment. Measurements were performed directly in the diluted emulsions (mean, n = 3).
