Combined drying (CD): The pretreated rice was dried
for 80 min to a moisture content of 40% (w.b.) at
90C by hot-air drying, and dried for another 10 min
to a moisture content of 20% (w.b.) under 2.5W=g
microwave; a combined osmotic solution with 4% glucose
and 25% NaCl was added into the semi-dried
products at a solid-liquid ration of 3.5 g=mL at room
temperature, and the whole system was mixed for
10 min and left to stand for 30 min. Final products with
15–20% (w.b.) moisture and 0.5 aw were obtained in
20 min using hot-air drying at 90C. By this new combined
processing (CD), a new type of product with
higher moisture content and lower water activity was
obtained. The moisture content and aw of the CD sample
were 17% and 0.5, respectively.
