The Shannong 2 cultivar is a good drought-resistant cultivar with good flour quality for Chinese noodles (moderately, wet weight basis protein content 12.5%, wet gluten 38.9%, gluten index 51.3, stability of dough 3.2 min, ash content 0.51%),
which was bred by Shandong Agricultural University. Shannong 2 was milled into flour using an MLU-202 Automatic Laboratory Mill (Wuxi, P.R. China) according to AACC approved method 26-21A (AACC, 2000), with the flour extraction rate at 70.2%.
