presents the eect of dietary vit. E on pH, drip loss, vit.E and TBA values of both muscles. No signifficant difference in ultimate pH was found between treatment groups. In LT muscle three samples from the SUP group and one sample from the CON group had ultimate pH values >6.00. Since in DFD muscle colour and colour stability are dierent, these samples were excluded from statistical analyses of colour data. No high ultimate pH values were observed in PM muscle
