Amaranth is metabolized into amine

Amaranth is metabolized into amine derivatives in viva. Amaranth is reduced by aqueous d-fructose at elevated temperatures to from a mixture of hydrazo and amine species, which may have toxicological significance. The interactions between additives such as amaranth and other food components should be considered from the viewpoint of toxicology.
