Gaeng Hang Lay (แกงฮังเล) is a Northern Thai Lanna curry that is well known within Thailand as a regional speciality. I first had it as part of a delicious Lanna spread at a restaurant in Chiang Mai with some friends and family last year. It was the belly pork alone which initially caught my attention, but within a couple of mouthfuls I established a greedy affection for the entire dish.
