The sodium caseinate/A.g mixed dispersions were prepared by
adding a sodium caseinate solution to an A.g dispersion at protein
to polysaccharide (Pr:Ps) weight ratios of 1:1, 2:1 and 3:1and total
biopolymer concentrations of 0.03 wt.%, 0.045 wt.% and 0.06 wt.%.
The mixtures were acidified by the careful addition of 1, 0.1, and
0.01 N HCl (or 0.1 and 0.01 N NaOH, if necessary) from pHw7.00 to
pH w2.00. After adjustment of the mixture’s pH to the desired
value, samples were taken out for spectrophotometry and for
particle size analysis.
