On the product side, species, variety, and maturity level all have a significant
effect on natural tissue structure in cell membrane structure, protopectin
to soluble pectin ratio, amount of insoluble solids, intercellular spaces, tissue
compactness, entrapped air, etc. Structural differences are not only encountered
among materials of different species, variety, or maturity level but even
between different sections of the same piece of fruit (i.e., apples) (Vincent,
1989).
