the emulsion droplets. The multi-surface layer consisted of lactoferrin
significantly reduced the destabilization of the emulsions induced
by calcium ions, even with small amount of lactoferrin
involved in the surface layer. Steric repulsion interaction produced
by the large lactoferrin molecules on the surface is considered to
contribute the preventing the flocculation caused by Ca2+ binding
and reduction in the electrostatic repulsion between the emulsion
droplets.
