2.2.4. Centrifugation test
The centrifugation test was performed using a laboratory centrifuge (Centrifuge 5804, Eppendorf, Germany) to determine the stability of the emulsions against gravity. Each sample (4 g) was centrifuged twice for 15 min at 3000 rpm in 10 ml graduated plastic test tube, to monitor whether phase separation occurred. The tests were performed at 22 ± 2 °C.
