3.4. Diffusion coefficients
In order to determine the diffusion coefficient from drying kinetics data, curves of the residual moisture ratio and residual solids gain ratio versus OD time were drawn as a function of time in logarithmic coordinate, as shown in Fig. 4 and Fig. 5. Using Eqs. (3) and (4), the effective moisture and solids diffusivities were calculated from the slope of the plot of ln (ML) and ln (SG) against time. Good linear correlations (r2 > 0.9) for moisture loss and solids gain were obtained for both species under different experimental conditions, as was found in previous literature studies on osmotic dehydration ( Yang and Le Maguer, 1992).
