The Torulopsis is an obsolete classification of heterogenous collection of asporogenous yeast mostly included to genus Candida. Former Torulopsis species colonize in association with plants, insects (partially symbiotic), are present in soils, water, and the air. These yeasts are used in food processing for long time like in the production of fermented food (wine, indigenous food, and beverages), found in sourdough, and milk products. The broad temperature range, their high osmotolerance, and strong biochemical activities promotes spoiling as well. Some strains produce surface-active extracellular lipids. Torulopsis glabrata can cause fungemia mainly in immunocompromised or weakened people.
