In animal experiments, a diet rich in fat was shown to induce hyperglycemia and hyperinsulinemia (20). In addition, a diet enriched with egg yolk, compared with a control diet, was associated with elevated plasma glucose in male, Wistar albino rats (21). However, limited and inconsistent human studies have examined the relation between eggs and glucose metabolism. Data from the Zutphen Study (22) reported a positive association between egg consumption or dietary cholesterol and fasting glucose.
