2.5.7. Rehydration capacity
For the determination of rehydration capacity, about 10 g of dried sample were placed into a cloth and they were put in a beaker containing 250 ml distilled water. The beakers were kept at 20 ± 2oC, for 14 h. Then the samples were taken out and drained over a mesh for eliminating the superficial water and weighted (Lewicki, 1998). Rehydration capacity (RC) was calculated by taking the ratio of the total weight after rehydration (Wf), to the initial dry weight of the sample (Wd) in grams:
