2 medium sweet potatoes
1 tablespoon of minced garlic
¼ cup diced red onion
1 tablespoon olive oil
A dash of cayenne pepper, cinnamon, salt and pepper
Directions:
Peal sweet potatoes or leave peal on. Quarter and sliced potatoes and place in a large mixing bowl. Add remaining ingredients and mix until ingredients and evenly spread. Place on baking sheet and cook at 375˚ for 30-35 minutes.
Ingredients for Eggs:
6 large eggs
1 tablespoon vinegar
6 cups water
Tip for cooking the perfect poached egg is adding a tablespoon of vinegar to your boiling water. Reduce to a simmer, swirl the water and then add egg. Allow simmering for 2-3 minutes. Cook poached eggs individually and when ready to eat.
