Tom Yum Soup - Yummy (and Easy)!
This Tom Yum soup is Tom YUMMY soup, and it's so simple to make! Every time I make it I marvel at how incredible it tastes - fresher and better than our local Thai place, and all within 25 minutes, so it's faster than take-out too! Tom Yum is famous all around the world, and it can be made myriad ways. I love it best when made with coconut milk, as in this easy, delectable recipe. The ingredients can be varied according to your likes and what you have on hand - experiment with different types of seafood if you like, or add chicken for additional protein. I like mushrooms in mine and another nice vegetable is chopped cabbage, but broccoli, green beans, zucchini... nearly any type of green vegetable is good. Make it and enjoy a bowl of pure, unbridled pleasure!
